OK let’s get one thing straight. Chilean Sea Bass is the world’s greatest fish. It is easy to cook due to its high oil content and seems to come out perfect almost all the time. You will greatly increase your fan base if you invite friends over and serve them sea bass.
Chilean Sea Bass is fairly thick and you will need to turn it at least once to ensure it cooks evenly. On the thicker pieces, I usually grill it about 6 minutes per side (thinner pieces maybe 4-5 minutes per side) and then cut into the fillet to see if it is cooked all the way through. As with all seafood undercook, undercook, undercook. If it appears slightly raw in the middle, perfect, pull it off the grill. It will keep cooking to perfection on the way to the table. One quick other point, if you have a thermometer you can test the sea bass by putting it into the middle of the fish and when the temperature is about 142 degrees the fish is done.
As far as what do I put onto the sea bass, the answer is not much. I use the same basting mixture as on Blog #1, “Colossal Shrimp”. Mix up some olive oil or melted butter with some lemon juice and some Italian spices. Baste the fish at the beginning and every time you turn it.
MISO~GLAZED CHILEAN SEA BASS
For those of you that like a bit more complex recipes, here is a great one from a long time friend:
MISO~GLAZED CHILEAN SEA BASS
( serves 2 )
2 6 oz. filets of Chilean sea bass
6 Tbls. red miso (fermented soybean paste)
1/3 c. sugar
3/4 c. mirin (sweet Japanese white wine)
1/4 c. sake (doesn’t need to be high end……buy that for drinking!!)
Marinate the fish 4 hours before you plan to cook and serve it.
-mix miso, sugar, mirin & sake together in shallow baking dish.
-add fish and turn to coat all sides.
-cover tightly and refrigerate.
-remove from refrigerator 1/2 – 1 hour before baking.
-remove fish from marinade to another baking dish…leave marinade on top of fish to form a glaze
-oven roast @ 350 F until just opaque in center…about 12-15 mins. this depends on thickness of fish
Serve this with steamed Jasmine rice and asparagus or whatever else looks good!!
