Alaskan wild caught COD is great in many recipes, or combined with many different salsas, or sauces. The Cod from Ocean Prime Seafoods is the best since it was frozen on the boat, the closest to fresh as possible. The following was recommended by one of our customers:
Lemon-Caper Baked Cod
1/4 C butter, cubed
2 T lemon juice
1/4 tsp garlic pepper blend
1/4 tsp grated lemon peel
2 T capers, drained
4 Ocean Prime Cod (6 oz each)
1/2 tsp seafood seasoning
1 T crumbled feta cheese
In a small microwave-safe bowl, combine the butter, lemon juice, garlic pepper and lemon peep. Microwave, uncovered, on high for 45-60 seconds or until butter is melted. Stir in capers.
Place Cod in an ungreased 13 x 9 baking dish; sprinkle with seafood seasoning. Spoon butter mixture over fillets. Sprinkle with cheese. Bake, uncovered, at 425 degrees for 10-12 minutes or until fish flakes easily with a fork. Yield – 4 servings.
